breakfast is an important meal around this house! my husband often works on different time zones and isn't home in time for dinner so we always make sure that we have breakfast as a family together. and these banana pancakes ( or eyes 😉 ) are often on our plates because they're so super simple and healthy! ONLY two ingredients - seriously!
banana pancakes
1 ripe banana
2 whole eggs
mash banana and whisk in eggs. cook as you would any other pancake!
these are also a huge hit with my 9 month old. he eats a whole batch himself 😳
